The table is the place where each day culminates. It could be a stump at a campsite, the tailgate of a truck, or a 12 seat banquet table fit for a king. At the end of the day, it doesn’t necessarily matter as long as you’ve got good company and a warm plate of food in front of you. The table is a space to take a breather after a long day at work or out in the wild. A time commune and reflect on the adventure of the day. A moment when time stands still and it's all about good food, clinking glasses, storytelling and laughter until it's time to wind down and do it all again the next day.
For us, “The Table” is as much symbol as it is physical. This way of thinking has allowed us to look at the food system and “dining” in a much broader view. We have come to the conclusion that any meal can be special and hold the same weight in our memory. A truly remarkable meal can happen anywhere, be it around a campfire or at a three star Michelin. We’ve allowed ourselves to think more openly about what is possible in the world of food and no longer be constrained by the walls of a restaurant.
Now, we focus on providing high quality, geo-specific dining experiences catered specifically to the wants and needs of our guests. We utilize as much wild product as possible, including any fish or forage we can get our hands on during our daily adventures along the coast. We also rely on our immense network of friends, purveyors, and industry professionals we have compiled over the years. This gives us access to the most pristine and unique product available at any given time of the year. The sourcing of product guides our cooking and ultimately what will fill your table, where ever that may be.
